recipe | simple salad

One thing I have learned about myself, is that it is essential to have some easy go-to meals/snacks prepared ahead of time and ready to eat at a moments notice.  Quite often I get  home late or return from the gym ravenous. and I tend to grab anything that is within my arms reach and ready to be consumed. For me, this used to be some sort of packaged, processed food with very little nutritional value and high in carbohydrates and calories. Now, I have learned to prepare several meals or salads ahead of time that will keep for several days. At the moment, I love to make a little vegetable chopped salad or gluten-free tabouli for a quick and easy go-to meal. I throw it on top of a big bed of spinach or sometimes just eat it by itself. You can use so many different combinations of veggies, but right now I am loving this little bean salad:



  • 1 cup of cooked red kidney beans
  • 1 cup of cooked garbanzo beans (if using canned, be sure to drain and rinse well)
  • 1/2 of large cucumber, diced (i leave the peel on for extra crunch)
  • 1/2 cup of grape tomatoes, quartered (optional, sometimes i leave them out)
  • 4 green onions, diced
  • 1/4 of large red onion, diced (or more if you like a lot of onion)
  • small bunch of fresh parsley, rough chop
  • small bunch of cilantro, rough chop
  • 2 tsp of dijon mustard (i like the grainy variety, but any type will work)
  • 3 tbsp of good quality balsamic vinegar
  • 1/4 cup of cold pressed olive oil
  • freshly ground black pepper and sea salt to taste


Simply wash, chop and dice all of the vegetables and herbs and place in a medium bowl. In a measuring cup or separate small bowl, add mustard and vinegar whisking together until combined. slowly stir in olive oil, mixing well. I triple the dressing recipe and keep in the fridge. I only add the dressing to the veggie mixture before eating each serving. But feel free to mix it in ahead of time if you prefer the dressing to soak into the veggies. This keeps for 3-4 days, but it never makes it that long in my house!
